January, as usual, is a time to self-reflect, set goals, and decide what to achieve in the coming year. For
me, my 2022 resolution is simple: find Utah’s best food truck. This seemed like a lofty goal as Utah has
many food trucks to choose from, with new ones opening all the time. That said, while the year has just
begun and there are undoubtedly many mobile meals to be consumed before it’s over, I am going to
boldly declare that I may have accomplished my resolution already.

I rolled up to Rickle’s on one of those blustery Utah days where the sky is gray, the clouds hang low, and
the rain is icy cold. Not an ideal day for ordering food outside. Nonetheless, Jan was happily cooking
away in her truck and, after I quickly perused the menu, she invited me to sit inside to get warm – an

offer that was gratefully accepted. Rickle’s is named after Jan’s husband Rick and it is one of Utah’s
original food trucks, serving amazing cheesesteaks for 13 years!

The menu was straightforward – sandwiches start with marinated steak, red onions, and red & green
peppers. You can then customize your sandwich with options like cream cheese, cheddar sauce,
provolone, hot cherry peppers, alfredo sauce, or spaghetti sauce. Now, cheesesteak purists might think
this menu has gone overboard, the classic Philly cheesesteak simply being adorned with Cheez Whiz or
provolone and, while there’s nothing wrong with the original recipe, I highly recommend giving Rickle’s
a try. I got one with cream cheese and hot cherry peppers, another with alfredo sauce, a side of fries
with their homemade fry sauce and a side of homemade tortilla chips with cheddar sauce.

One bite and I was in heaven. Both sandwiches were addictively fabulous. I can promise you I’m going
back! The bread was slightly crusty on the outside, soft and chewy on the inside. Incidentally, these
sandwiches sat boxed up for a few minutes while I visited with Jan and, despite that, they weren’t the
least bit soggy. I liked the cream cheese and cherry peppers more than the alfredo, as I am a sucker for
melted cream cheese, but both sandwiches were exceedingly delicious. She told me she caters for
weddings and other large events and her sandwiches hold up well for quite awhile. The fries were
perfect and the fry sauce just right. I don’t know what spice blend she’s concocted for the fry sauce, but
it’s different enough to be interesting while still being exactly what I wanted to dip my fries in. I thought
the chips, which were dusted with parmesan and ranch powder, were also very good and you really
can’t go wrong with cheese sauce. This wasn’t just a great meal for a food truck, it was a great meal
period. Arguably the best cheesesteaks in the state.

Know Before You Go: Rickle’s is often stationed in Kaysville but check online for other locations they’ll
be at. They are worth seeking out. I drove half an hour to try them and would absolutely do so again.
Two sandwiches, chips and fries with dipping sauces, and two drinks came out to $24.13 and worth
every penny. As mentioned, they cater events and I’m willing to bet they’d do a top-notch job. 13 years
is a long time for a food truck to thrive, which is proof that Jan and Rick know exactly what they’re
doing!
